why don't they use the famous games in history to train/test the program?

The reason I can think is

KGS has a large number of digital game files that cover all levels that they can directly use and do this without worrying too much about overfitting.

BTW, the self-challenging-learning process is important, but without the starting human training set and programmers' watching to avoid problems like overfitting, the program has no start point and can go no further.
